What are your favorite beet eats?  Beets are one food to have play with. I cook and eat beets. They add a punch of flavor and color to your diet. Beets are a really fun add to  your plate. You can eat them raw or cooked.

Barriers to Beet Eats

People shy away from beets because of the preparation and potential mess. Washing them can be a project.  A friend of mine told me many years ago to wash and cut before cooking them to remove that barrier. It really works.  Wash them right when you buy them.  Put them in a bag in the fridge.

When you peel beets your hands get red.  Really red!  The stain can last a day or two.  What do you do?

Lemon juice and soap and water works to some extent. Otherwise wear the stains proudly, to tell the world you eat whole foods and beets.

Benefits of Beet Eats

Beets are sweet and delicious. The nutrition content is fabulous in both the greens and the roots. Beet greens like most greens are full of fiber and minerals vitamin A and C.

Beet Eat Recipes

Lemony Beet Greens

Ingredients

  • 1 bunch of beets
  • Salt
  • 1  or  Lemon
  • Olive Oil
  • Water

Equipment

  • 2 Stainless Bowls
  • 1 Colander
  • 1 knife
  • 1 cutting board
  • 1 pot with a cover

Instructions

  1. Chop Greens into bite sized chunks.
  2. Add to one of the bowls.
  3. Fill bowl with water and soak and rinse.
  4. Move Greens to the second bowl.
  5. Drain first bowl. Fill second bow.
  6. Repeat until water is clear and clean
  7. Move greens to pot. It’s okay to leave some water on the greens
  8. Cover Pot
  9. Turn on the heat
  10. Add a small amount of water to the pot as necessary
  11. Steam greens to your level of done-ness. .
  12. Drain Water off greens in  a colander.  Shake the liquid off.
  13. Zest and Juice Lemon
  14. Mix Olive oil, lemon salt and pepper.
  15. Add greens to a serving dish
  16. Dress Greens
  17. Serve

 

Fun Orange Beet Eats
Orange Beets

Roasted Beets

Ingredients:

  • Beets
  • Coconut oil
  • Salt
  • Pepper

Equipment

  • Knife
  • Peeler
  • Cutting Board
  • Bowl
  • Parchment Paper
  • Baking sheet

Instructions:

  1. Wash Beets
  2. Peel Beets
  3. Cut Beets into 1” cubes (Your hands will get red!) It the beets
  4. Add to a bowl
  5. Add Olive oil to cover and salt and pepper to taste.
  6. Place on a baking sheet covered with parchment paper
  7. Roast until fork tender at 375F about 45 minutes.
