It is near the end of summer. In my garden this is the time of year when squash and cucumbers escape detection and grow into massive clubs. Wikipedia says zucchini can grow to 3 feet in length. I believe it!
As soon as September rolls around, we all get really busy, oops things get away from me. I get a lot of squash in my CSA(community supported agriculture) share normal sized, so I am always trying to use it up. We don’t eat wheat based dessert things so zucchini bread and zucchini muffins are off the menu.
Plain zucchini steamed or sauted, well my husband doesn’t love it. I just get bored of it. We don’t eat tomatoes any more so my old favorite of zucchini, onion and tomato is a fond memory. So I have been adding it to my morning smoothie to use it up. I really needed to figure out a new recipe to get him to eat it more willingly.
In New England it is also the start of apple season. We had a freak hail storm about a month ago and a lot of the apples got damaged skin. Perfect for apple sauce!
A local farm is selling them as utility apples pretty cheap. I bought a 40 lb box. So now I have lots of squash and lots of apples to process.
So I came up with this idea to make a kind of zucchini bread without the bread.
I plated it up and my darling man said:”What is this? It’s really good!” It was like eating candy. I think kids might like it too. This recipe is a keeper.
Zucchini & Applesauce ( My Deconstructed Zucchini Bread)
Ingredients
- 1 zucchini club
- ½ cup apple sauce ( homemade, sugar free)
- 1 onion
- 1 tlb coconut fat
- Salt to taste
- 1 tsp cinnamon
Instructions
- Grate Zucchini (It looks like a lot, but cooks way down)
- Mince onion
- Melt coconut oil in a large sauté pan.
- Saute onion on med/low until clear
- Add grated zucchini.
- Cook through. As the water releases increase the heat to boil it off.
- Add Apple Sauce and Cinnamon and stir
- Add salt to taste.
- Serve Warm
